Seared Tuna with Avocado Salsa
Tuna Dengan Dabu-Dabu Dan Alpukat
The combination of tomatoes and avocado, topped with chillies, mint and lime creates a wonderful salsa that compliments the Tuna perfectly.
Serves 4
Ingredients:

300g loin of tuna (sashimi quality)

2 tbsp of vegetable oil

2 tbspof lime juice

Salt and black pepper to season

2 just ripe diced avocados
-
3 tomatoes, deseeded and diced

2 tbsp of lime juice
-
4 tbsp of extra virgin olive oil

2 red chillies, sliced thinly

50g shallots, peeled and chopped finely
-
2 tbsp of chopped fresh mint or basil

Salt and black pepper to taste.
Salsa:
Steps:

First make the salsa. Put all the salsa ingredients into a bowl, mix well and put in the refrigerator.

Season the tuna with salt and black pepper and drizzle with 1 tbsp of vegetable oil, ensure the entire tuna is covered with oil.

Heat 1 tbsp of vegetable oil in a frying pan (or griddle pan if you want to achieve char-grilled stripes on the tuna.)

Sear the fillets for 1 minute, 30 seconds for each side. Avoiding overcooking the tuna as it will dry out and toughen. Transfer to a plate.

Mix the lime and extra virgin olive oil, season with salt and black pepper then pour over the tuna fillets. Press the fresh mint or basil over the surface.

To serve, cut the fillets into 2 cm thick slices.

Divide the salsa among 4 serving plates and place the tuna on top of the salsa. Garnish with young fresh mint or basil leaves.
