Rice pudding with Mango

Nasi Ketan Hitam Dengan Mangga

You can find this dish all over Indonesia. You will be pleasantly surprised when you taste the soft rice with palm sugar and mango.

Serves 8 - 10


  • 250g black glutinous rice

  • 125g white glutinous rice

  • 1.5 litres water

  • 0.5tsp salt

  • 200ml coconut cream

  • 4 ripe mangoes

  • 4 pandan leaves (optional)

  • 250ml palm sugar syrup (see page 52)

  1. Rinse the rice well and soak it overnight. Drain and rinse once more before cooking.

  2. Put the rice and water into a pot with 2 pandan leaves and cook for approximately 45 minutes or until the water evaporates. Remove from the heat and let it sit at room temperature.

  3. Peel the mangoes and slice the fruit.

  4. To serve, put 2-3 tablespoons of rice into a ring mould. Invert the mould on a plate, press down and gently remove the mould. Repeat for each serving.

  5. Top each serving with 2-3 tablespoons of palm sugar syrup and 1 tablespoon of coconut milk.

  6. Serve with sliced mango.
